Abstract: Sedimentation velocity of starch was determined at three different pH in the presence of streptavidin functionalised Fe3O4 nanoparticle. In the first step, the streptavidin functionalised Fe3O4 nanoparticle was synthesised and characterised by various analytical techniques like Fourier transform infrared (FTIR) spectroscopy, X-ray diffraction (XRD) method, vibrating sample magnetometer (VSM) and scanning electron microscopy (SEM) analysis. The role of streptavidin functionalised Fe3O4 nanoparticles on the sedimentation velocity of starch was studied and the results were critically compared. The role of nanomaterial on the structure-property relationship of starch was elucidated with the help of FTIR, SEM and VSM like techniques.
